FYNE ALES ORIGINS BREWING - spring 2018 collection

baroque

ABV: 8.3%

FORMAT:  Bottle (375ml)

STORY:

Baroque is the most complex and artful Origins Brewing beer yet. In it's simplest terms, it is a blend of barrel-fermented Belgian-style saisons using Flanders and Wallonia cultures along with native microflora captured using a makeshift coolship in our original brewery, augmented with cultivated Brettanoymces. Each individual beer spent a minimum of nine months in French oak barrels, with further aging in bottle since packaging in May 2017. Think of Baroque as our artful tribute to the beautiful beers and brewing methods of Belgium.

FROM THE BREW TEAM:

"Baroque began life in 2015, and like all the Origins Brewing beers from those early days, it's extra special to me as it speaks to the ambition we had for the project before it even really existed.

We know it has an issue with carbonation - such is the risk of playing with wild microflora - but I felt it was important to put out as for me, the character of this beer is as close to capturing the flavours of 'who we are' and 'where we are' as a brewery as we've gotten so far."

TASTING:

Layers of ornate, subtle flavours flow through each mouthful - sweet cherry pie, bitter orange, resinous oak and an effervescent, dry finish with a hit of rich, leathery Brett.

SERVING:

CAUTION - Due to the wild nature of this beer, it is likely to be highly carbonated. We recommend ensuring the bottle is very cold before opening, having a glass ready and opening carefully at a 45 degree angle. Allow the beer to come up to temperature once opened.
