Goodnight, Summer is a story of friendship and flavour - a gentle sour ale brimming with fragrant camomile and tart gooseberries.
The beer was brewed with Inver, a small, characterful restaurant on the banks of Loch Fyne that takes pride in showcasing local ingredients to produce, flavourful, modern Scottish food. Inspired by their passion for local produce and exciting dishes, we infused a Scottish-wheat Belgian-style wit with two varieties of camomile before conditioning on gooseberries, including some foraged from around the loch (thanks John) and blending with a clean sour ale before bottling.
Fragrant floral aromas give way to sour, fruit tartness from the gooseberries. A short, refreshing finish cleans the palette.

"We love working with Pam and Rob from Inver - the witbier base of Goodnight, Summer was brewed using the same East Lothian raw wheat as they use to bake the restaurant's bread. The beer pairs exceptionally well with their amazing dishes, but it's also the most approachable of the first collection with a nice subtle tartness from the gooseberries and mellow floral character from the camomile."
Pairs excellently with light seafood and white meat dishes with good company.
