FYNE ALES ORIGINS BREWING - sUMMER 2018 collection
FORMAT: Bottle (375ml)
Mion Blue is the latest single-barrel Origins Brewing release - our take on a mixed fermentation table or 'petit' sour with modest ABV and an approachable flavour profile. In Summer 2017, we transferred four hundred litres of kettle-soured wort into one of our favourite French oak barrels that was nurturing a developing version of house culture, filling the remainder with juicy blueberries. The beer was left to ferment and develop with the Brettanomyces-forward mixed culture for nine months before bottling.
FROM THE BREW TEAM:
"When we're planning Origins Brewing beers, we're always conscious that we want to offer some beers that are big, bold and complex, and some that are more approachable and gentle - Mion Blue falls beautifully into the latter category.
We'd originally earmarked the beer for blending, knowing that we'd used a fairly simple base beer and a fruit which yields a beautiful colour, but isn't known for giving big flavours. But when we tried it, we were all pleased at how well the beer had developed in the barrel - it's light and fruity and satisfying, with a subtle funkiness that doesn't overpowered the delicate simplicity of the beer."
Pouring a vibrant magenta, a nose of juicy berries is followed by initial flavours of gentle earthy, soft fruit and subtle mineral berry notes. A dry finish concludes a splash of lactic sourness, and a hint of the Brett character of the house culture.
