The story of Pandora dates back to early 2015, when the concept of Origins Brewing was in its infancy. Named after the earliest woman in Greek mythology, Pandora is the earliest beer created by Origins Brewing to be released.
Pandora began as a strong, Belgian saison that was repitched with Brettanomyces Bruxellensis alongside blackberries foraged from Glen Fyne for a lively secondary fermentation. A robust doppelbock was used to add a sweeter character to the beer, before transferring to clean American oak with an addition of kettle-soured wheat beer for 12 months of conditioning in wood.

"The thirty-month history of Pandora makes it a very special beer for us - getting it to this point feels like an odyssey. Throughout all the additions and movements, the beer has had a dark-fruit minerality within a rounder winey body, but the time spent in oak added a sweet, smooth, almost-vanilla layer to the finish."
Light, berry sweetness and minerality is layered over a strong wood character with hints of leather, and a smooth finish with a hint of vanilla.
Pairs well with red meat dishes and creamy cheeses.
